Beetroot Pickle
Serves 6
Ingredients
6 medium beetroots
10 garlic cloves
1 teaspoon salt
2 tablespoons sugar
2 cups water
1 cup apple cider vinegar
Preparation
1. Peel the beetroots and place
them in a pan. Add enough water
to cover the beetroots and boil over
in medium heat until soft.
2. Strain and slice the beetroots,
place in a clean glass jar. Add sliced
garlic, sugar, salt, vinegar and water.
Close the lid and rest your pickles in
a cool place for 3-4 days, then serve.
