Fig, Walnut and Goat Cheese Salad
Serves 6
Ingredients
4 medium figs
5-6 fresh whole walnuts (you may use dried
walnuts if you can not find fresh ones)
50 gr goat cheese
1 medium butterhead lettuce
1/4 bunch fresh mint
1 teaspoon honey mustard
1 lemon
1/2 teaspoon salt
3 tablespoons olive oil
1 tablespoon corn flour
1 teaspoon flax seed
Preparation
1. Chop the lettuce in large chunks.
Separate the walnut to chunks by your
hands and add onto the salad.
2. Divide the figs into four and add.
3. Prepare the salad dressing by mixing
honey mustard, salt, 2 tablespoons olive oil,
and the lemon juice. Pour onto the salad.
4. Cut the goat cheese in slices, dip in
the corn flour, stir fry in the pan with
1 tablespoon olive oil
5. Add the goat cheese onto the salad.
6. Sprinkle the fresh mint leaves and serve.
